206 Dan Dan Mian - Sichuan Spicy Noodles

Dan Dan Mian - Sichuan Spicy Noodles 
      

Ingredients : 
2 tablespoons vinegar 
1 teaspoons pepper 
2 pounds ground pork 
2 teaspoons sesame 
1 teaspoon  cornstarch 
        3 teaspoons olive oil  
               1 teaspoons brown sugar 
                       Right amount of red chili 
                                   5 garlic finely chopped 

3 tablespoons chili oil  
    2 tablespoons cooking wine 
         3 cucumber shredded   
               Salt and pepper to taste   
                     3 tablespoon soy sauce   
         3 tablespoons peanut butter  
                                1/2 onion finely chopped  
                   2 teaspoons white sesame seeds 
                                                         


2 stems green onions finely chopped  
            1/2 bowl dry preserved vegetables
                   12 cup peanuts roasted, finely chopped
                            1 tablespoon peppercorns powder


4 ounces chicken stock or chicken flavor 
2 teaspoon  ginger, peeled and finely chopped  
2 pound, 1 package fresh pasta or Udon noodles 



The ingredients vegetable can add you own and match  : spicy bean paste, pickled mustard tuber ,sauerkraut, fried shrimp, Tahini , peas, carrot, bok choy, chicken breast, cabbage, chives   



Directions : 
1. 3 cucumber shredded, 2 stem green onions  finely chopped, rinse the salty preserved vegetables in water, 1/2 onion finely chopped, 2 teaspoon  ginger, peeled and finely chopped, 5 garlic finely chopped, 1/2 pound bok choy cut into sections and boil in hot water then remove and set aside,  Saute white sesame seeds and then pour into a bowl to grind .









2. In a bowl add the sesame paste, pepper oil, chili oil, vinegar, sesame oil , Sichuan pepper, chicken stock, soy sauce, mirin , Peanut butter, (Spicy watercress),  Amount of water, Salt and pepper to taste, the sauce mixture and and simmer for  8 minutes . Mix thoroughly become sauce . 










3. with pepper and cornstarch,  marinated minced pork, Heat a wok stir-fry ginger, garlic and onions .Remove all the excess oil and  saute the ground pork, Then added a little bit of soy sauce, spicy bean paste, preserved vegetables, wine,  minced pork remove and set aside for mixing with noodles .










4. Bring a large pot of water to boil the noodles, Add a little salt and oil, Meanwhile, when the pot of water has come to boil, then stir with chopsticks, go to the next step, toss in noodles and cook according to package directions. Drain well.




5. remove the cooked noodles, Remove the cooked noodles and drain the water, put them into a bowl,pour a little sesame oil into noodles and mix well, Then put vegetables in boiling water to boil




6. Add 3-4 tablespoons of cooking water in the cooked noodles .  At this time drench previously been tuned sauces ladle the sauce on top ground pork, preserved vegetables, after sprinkle with chopped green onion with peanuts, Another point to sesame, all complete and serve while hot .
















Feelings after eating  :     
A bowl of fragrant Sichuan dan dan noodles with full of spices. On the noodles side can also add shredded cucumber. Or  any of your other your favorite vegetable. I like to serve it with a side of soup it is particularly delicious taste, Although I have not been to Sichuan, But I like to eat Sichuan food, Also very pleased to be able to share with everyone and try to cook your own bowl to eat.
