Mexican Drunken Chicken Recipe
Ingredients :
5 bay leaf
1 can beers
1 tsp paprika
1/2 bowl chops
2 medium Lemons
1 stem fresh oregano
5 cloves garlic minced
1 tsp limes Juice
2 teaspoons ketchup
1 tsp chicken knorr
Salt and pepper to taste
1 stem fresh rosemary
1/2 teaspoon cayenne pepper
1/2 large onion, chunks
1 Jalapeno pepper chopper
1 medium carrot chunks
1/2 teaspoon cumin seed ,crushed
1 fresh tomato cut into chunks
½ apple cut into chunks or orange juice
2 tablespoons of olive oil or vegetable oil
2 tablespoons butter (optional)
5 pound chicken legs or whole Chicken cut in pieces
Directions :
1. 5 pound chicken legs or whole chicken cut in pieces . Rinse and dry the chicken leg , pat dry with paper towel.
2. With a spoon, dig out the Jalapeno seeds, minced 5 garlic cloves, ½ apple cut into chunks, 1 fresh tomato cut into chunks, cut one medium carrot into chunks.
3. Salad dressing seasoning : sugar, oil, vinegar, olive oil, 1/2 tsp celery seed, 1 teaspoon mustard, salt and pepper to taste. Place all of the ingredients into a blender. Mix all the ingredients . Pour into a bowl and set aside. Or you can buy Italian dressing at the store or any of your favorite dressing.
4. Marinate for the chicken : Add beer, bay leaves, tomato paste, garlic powder, carrots, apples, garlic, tomato pieces, potato chips, oregano, cumin, lemon juice, rosemary, chili sauce, Salt and pepper to taste. In blender grind all the ingredients together.
6. In a pan, place the skin side of the chicken first. Cover with lid and then flip chicken. Cook half til golden brown.
7. Preheat oven to 350 ℃ and place the grilled chicken inside. In a baking pan add some water for moisture. Cook for 30 minutes. After 30 minutes, flip the chicken and add the suave on the chicken. Continue to bake for another 30 minutes. Lastly, brush a think layer of butter.
8. Lower the temperate to 300 degrees. Continue to slow cook for about 25 minutes. Bake till slightly crunchy golden brown. You can add more seasoning if you want.

This Mexican drunken chicken recipe is a bit sour and spicy. The chicken is full of different flavors . It is marinated over night and slowly cooked so the chicken taste delicious. I pan fried it first than finish it in the oven. This is a wonderful recipe to make for dinner.
