green curry beef with beans and eggplant
Ingredients :
- 10 Thai eggplant
- 4 teaspoons green curry sauce
- 1 can coconut milk
- 2 slice galangal (ginger)

1/2 cup basil leaves
- 6 kaffir lime leaves
- 2 chili chopped
- 2 stem green onion chopped
- 2 small red onion minced
- 4 cloves garlic chopped
- 1 red bell pepper cut 3/4 inch
- 1 green bell pepper cut 3/4 inch
- 1/2 tsp salt
- 2 teaspoons chicken flavor
- 3 teaspoons fish sauce
- 1 teaspoon palm sugar
- 1 bowl beans
- 2 tablespoons red curry powder
- 2 shallot chopped
Directions :
- Cut the beef into small pieces , boil until soft.
- Wash 10 Thai eggplants, green beans and then put them in a bowl.
- Green pepper and red pepper into strips.
- In a food processor grind the galangal (ginger), red onion, kaffir lime leaves, garlic and chili.
- Add oil to the frying pan, stir in the ingredients, add 4 tablespoons Thai green curry paste and saute.
- Add 3 cups of water, boiled beef, Thai eggplant, beans, green and red sweet peppers.
- Pour 1 cup of coconut milk into a pot and cook on medium heat, add seasonings, chicken broth, fish sauce, salt ,palm sugar
- Add pepper and sweet basil immediately turn off the heat and it take out enjoy !
